Blogging, Peanut Butter Rationing, and a New Friend

Winter has finally hit the midwest this week. Does anyone else find this weather a little alarming? Maybe I’m just paranoid but I feel like we are witnessing the serious effects of global climate change and no one wants to discuss it. The weather people on the local news have been joking all winter about the lack of snow and the uncharacteristically warm winter. I find it kind of bizarre. Rant complete.

The weather is has been bad and I really don’t want to leave the house but we are lacking most of the foods I eat on a daily basis. I used the last of the oats this morning. I need my oats! I have become obsessed this overnight oats. I’m pretty sure this is a requirement for being a healthy food blogger. Has anyone else noticed that?! There is one spoonful of peanut butter left. Meet my new baby!

My boyfriend and I just rescued her this past week. Her name is Zooey (Deschanel!)and she is in desperate need of peanut butter. Zooey was found in a barn with her newly birthed puppies. In addition to nursing her own puppies at the Shiba Inu kennel she ends up at, she also nursed some other stray pups. This left her very underweight. When we brought her home she was not very interested in eating so being the genius that I am I made a little peanut butter sauce to put on her food. I’m hoping the extra fat and protein will really help her to put some weight on but I’m afraid she is already spoiled and won’t eat anything that isn’t smothered in peanut buttery goodness (like her mother).

As you can see we are in a state a peanut butter emergency which is forcing me to go out and brave the cold. I’m trying to plan out my meals for the week first because I really don’t do well with going into a store without a list. I run around like a carrot with her top cut off (keeping veg). I’m spastic. I buy things I don’t need and I forget simple things I do. I need order in my life or all hell breaks loose and I wake up Monday morning only to realize I forgot soap and we have to shower with the piney holiday scented hand soap (LOVE Method). Yes that actually happened. On a side note: that debacle (in addition to my slight coupon obsession) has turned me into a soap hoarder and we not have a dozen bars of Dove in the bathroom closet. That may be a different post.

Now I have to figure out what I’m going to make this week so I can stop being a bum and start being a better blogger.

I stumbled upon this article a while ago so I know it is old news but I figure it may be new to someone. I have been thinking a lot about this kind of stuff lately because frankly I get tired of hearing negative things about the way I eat from people who have a certain stereotype about vegan/vegetarian/clean eaters. It seems that people always have some smart comment to make. I sent this article to my mom because she jokingly always tells me to eat a cheeseburger (usually as I struggle to do something). My mom’s response to this article was “when Germany names you strongest man I will stop telling you to eat a cheeseburger”. If this response came from anyone but my mom I would be irritated but it did indeed come from my mom therefore I found myself cracking up. I am very small and prior to the start of the new year was not consistently working and had not been for some time. Let me give you some background…

Like most clean eaters I did not start out this way. Everyone has a story, I’ll keep this short. I was a chubby kid. I probably weighed 20 pounds more than most of friends throughout elementary and most of middle school. 20 pounds may not seem like a lot know but let me tell you when you are a kid trying to play on the teeter totter 20 pounds is a lot. My mom feel bad looking back but she was just glad I was eating because when I was little I was always picky. Between 7th and 8th grade I really slimmed down to the point where teachers started to get concerned about me. Part of it was me going through a lot of emotional stuff and part of it was me consciously making an effort to pay attention to what I ate. It was then that I started working out. My love for working out only grew from there…

When I am consistently working out I feel so much better mentally and physically. Up until the start of the new year I had gotten out of a routine was finding it difficult to get back into the swing of things. It started in the beginning of the summer when I was preparing to move out for the first time. Since I am OCD and a control freak this consumed most of my time. Now that I have been on my own (and by that I mean with my wonderful boyfriend) for 6 months and into a routine of taking care of my own household I have made myself and my health a priority again. I have been doing yoga everyday (with the exception of a 3 day business trip) since new years eve. I have several DVDs and do anywhere from 35-50 minutes. I need to pump it up and push myself though. I want to develop more strength and muscle definition so I have decided to start lifting weights again. I am not much of a cardio girl but I LOVE weight lifting!

Today I started (along with practically every other blogger) day one of Jamie Eason’s LiveFit Trainer. I have never been able to do push ups (I can do chaturanga just don’t ask me to push myself back up to plank). Today I could do 2 of the wide push ups then I switched to girl push ups. While trying the first narrow push up I face planted.  A modification was in order so I did wall push ups. Even when I was in really good shape I was self conscious about working out in front of other people. Not only do I get nervous and lose concentration with a lot of strangers around me but I also have a weird phobia about other people seeing me sweat. So I plan on adapting the exercises so that I can do that at home with my weights and resistance band. If it gets to the point where I get up courage (or the more likely scenario that I need additional equipment) then I will join a gym. For now I’m working with what I got. I also plan on continuing yoga everyday to keep me calm and flexible.

Ăśber Moist Vegan Carrot Muffins

Baking is one my favorite things. It helps me unwind and clear my head. I came home from a really rough day at work today and these muffins were just what the doctor ordered. I love experimenting with new vegan recipes or veganizing old favorites. I’ll be the first to admit that many vegan baked goods come out dry especially when you try to reduce the fat content. These muffins have plenty of good stuff to keep them yummy and moist. You can use any combination of flours you like. “Healthy” muffins that I have made in the past have tended to be rather dense but this combination of flours yielded light and tender muffins. You can substitute agave or honey for the maple syrup and any other dry sugar for the stevia. Some people have an aversion to raisins (when I was little I thought they looked like boogers) so any dried fruit can be used. Next time I think I will use chopped dried apricots (one of my favs!). I am all about making recipes your own, which is why I give tons of suggestions for substitutions. Baking is technically a science so I try to stick to the basic proportions of recipes I find.

This recipes was adapted from Fat Free Vegan Kitchen Carrot Spice Muffins

Makes 1 dozen muffins

Dry Ingredients

3/4c Whole Wheat Pastry Flour

3/4c Oat Flour

1/4c Quinoa Flour

1/4c Stevia in the raw

1 TBSP ground Flax

1 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

1 tsp ground ginger

small dash cloves

small dash nutmeg

1/2 tsp salt

Wet Ingredients

1/3c maple syrup

1/3 c apple sauce

1/2c unsweetened vanilla almond milk

1/4c water

1 tsp vanilla

1 1/2c (about 4) shredded carrots – I just ran mine through the food processor

1/4 c raisins

1. preheat oven to 400 degrees

2. mix dry ingredients in large bowl

3. mix wet ingredients in a medium bowl

4. combine wet and dry ingredients, add carrots and raisins

5. batter will be very thick, spoon into muffin tins, sprinkle with rolled oats

6. bake 15-20 mins (mine were perfect at 15)




I did a rough estimate of the calories using Spark People.

1 muffin = 105 calories, 1.5 g fat

2.6 g protein/21 carbs/ 2.7 g fiber/ 8.3 g sugar

Thats a thumbs up in my book!
